Stuffed Cupcakes with Sprinkles & Candies

I have an obsession for sprinkles – those vibrant, colorful, and diverse decorations that add a special touch to various holidays and celebrations. Another love of mine is cupcakes. So, I had a unique idea: why not create cupcakes with a fun, colorful surprise of sprinkles tucked inside? The best part is that it's much easier to make than it might sound. Start by baking your favorite cupcake, then use an apple corer or a small round object to create a hollow in the middle of the cupcake. Fill this void with your favorite sprinkles, add some icing, and there you go – you've crafted a beautiful treat with a delightful surprise hidden within!

Serving size: 8-10 people
Time: 1 hour

Ingredients for the cupcakes:

  • 1 box of your favorite cake mix
  • 3 eggs
  • 1 cup water
  • ⅓ cup oil
  • Sprinkles and or tiny candy for the middle of the cupcake

Ingredients for the buttercream:

  • 4 sticks of unsalted butter, room temperature
  • 5 cups powdered sugar
  • 2 tsp vanilla or almond extract
  • optional: food coloring

Directions:

  1. Prepare the cupcakes according to the box, typically preheating the oven to 350 degrees, mixing all ingredients, pouring into cupcake liners, and bake for 12-17 minutes or until a toothpick comes out clean.
  2. Remove cupcakes from the oven and cool completely.  
  3. While the cupcakes cool, make the icing.
  4. In a stand mixer, add the butter and beat on medium until smooth.
  5. Slowly add the powdered sugar on low speed.
  6. Mix in the extract & add food coloring if you want. 
  7. Using an apple corer or small round object, hollow out the center of the cupcake. 
  8. Fill the center of the cupcake with sprinkles and or small candies. 
  9. Fill a piping bag with the icing and pipe the icing onto each cupcake covering the entire top so the sprinkles stay on the inside for a fun surprise. 
  10. You can add more sprinkles on the icing if desired.  Enjoy!
