Pizza Chicken

This is a straightforward, low-carb weeknight meal that can be prepared in advance and baked when you're ready. What I appreciate most about this dish is its versatility—you can make it for a single person or easily scale it up for a larger group by preparing one chicken breast per guest. It's also excellent for leftovers, as it remains delicious even when served cold, much like pizza. For a complete meal, consider serving it with a Caesar salad and your choice of bread or pasta.

Ingredients:

  • 2 chicken breast; about 1 pound
  • 1.5 cups pasta or pizza sauce
  • 1/2 cup diced fresh tomatoes
  • 1 teaspoons [Not So] SIMPLE SPICE

Optional stuffing:

  • 1/2 cup pepperoni
  • 1/4 cup black olives
  • 1/4 cup mushrooms
  • 1/2 cup mozzarella cheese
  • salt, pepper & Italian seasoning, to taste
  • Optional garnish: fresh parsley & or Italian herbs

Directions:

  1. Preheat the oven to 400 degrees.
  2. In a shallow casserole dish pour 1 cup of pizza sauce into the dish.
  3. Place chicken breast ( sliced down the middle but don’t cut all the way in half so you can stuff it).
  4. Add the diced tomatoes around the chicken.
  5. Add the rest of the sauce between the 2 chicken breast then add the pizza stuffing.
  6. Close the chicken and sprinkle with salt, pepper & Italian seasoning.
  7. Bake at 400 for about 35 minutes or until the chicken temp reaches at least 165 degrees.

*Optional: Add mozzarella cheese to the top of each chicken breast for an extra 5 minutes on broil until the cheese is bubbling
