I devised this recipe during peach season, but it's versatile enough to accommodate different fruits or even frozen peaches. The sweet and savory blend elevates your standard chicken dish with ease. What makes this recipe particularly appealing is its flexibility—you can prepare just the right amount to suit your needs, whether it's for a small gathering or a larger crowd. Just make 1 chicken per person. It complements beautifully with potatoes or rice and green beans, creating a well-rounded and satisfying meal.

Ingredients:
- 2 chicken breast; about 1 pound (marinated overnight in 2 cups of peach or orange juice)
- 4 slices of peach
- 4 slices of Brie
- 2 teaspoons [Not So] SIMPLE SPICE
- ½ teaspoon dried thyme
- Optional: 2 slices of Brie for top
- Optional garnish: fresh basil
Directions:
- Preheat the oven to 400 degrees.
- Place the chicken breast into a greased dish ( sliced down the middle but don’t cut all the way in half so you can stuff it).
- Add 2 slices of peaches & 2 slices of Brie inside the chicken. Make sure to stuff the cheese in first so it stays inside while baking. Fold over to close the chicken
- Sprinkle SIMPLE SPICE evenly to the top of each chicken breast.
- Bake at 400 for about 30 minutes or until the chicken temp reaches at least 165 degrees.
*Optional: Add 1 slice of cheese to the top of each chicken breast & place back in the oven on broil for an extra 5 minutes or until the cheese is bubbling
