Mediterranean Salmon

Ingredients:

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 teaspoon Greek seasoning
  • 1 teaspoon [Not So] SIMPLE SPICE
  • 1 tablespoon olive oil
  • Garnish: fresh parsley & Lemon wedges 

Directions:

  1. Preheat your oven to 400 degrees.
  2. In a skillet over medium heat, add olive oil and sauté garlic until fragrant. Add spinach and cook until wilted.
  3. Remove from heat and mix in the feta cheese. Season with SIMPLE SPICE and greek seasoning.
  4. Make a slit or pocket in the middle of each salmon fillet without cutting all the way through.
  5. Stuff each pocket with the spinach and feta mixture.
  6. Place the stuffed salmon fillets on a baking sheet lined with parchment paper.
  7. Season the salmon with more salt and pepper.
  8. Bake for 10-15 minutes, or until salmon flakes easily with a fork. Enjoy with lemon & fresh parsley.
