I adore mushrooms for their versatility in being stuffed with a variety of ingredients. They serve as the ideal vessel for creating delectable bites perfect for gatherings, and their simplicity allows you to prepare a multitude of them quickly! This particular recipe features Italian sausage, but the options for fillings are limitless, including choices like Boursin, crab, spinach, ground chicken, and more.

Ingredients:
- 1 pound mushrooms
- salt & pepper, to taste
- 1/2 pound mild Italian sausage
- 1 tablespoon Italian seasoning
- 1/4 cup boursin
- 1/4 cup breadcrumbs
- 1/4 cup Parmesan
Directions:
- Preheat the oven to 350 degrees.
- Place mushrooms on a greased cookie sheet.
- Spray with butter & sprinkle with salt & pepper to taste.
- Bake mushrooms for about 10 minutes.
- While the mushrooms cook, heat a small pan over medium heat & brown the sausage.
- Stir in the Italian herbs & Boursin.
- Fill each mushroom and top with breadcrumbs & Parmesan.
- Place back in the oven for 10 minutes. Enjoy!
