Italian Mozzarella Sausages

This recipe is one of the simplest I've ever created! I originally came up with it when I was following a low-carb diet, but you can absolutely serve it with some pasta, toasted bread for dipping, and a Caesar salad if you prefer. You can also switch things up by using chicken sausage or even shrimp. Whether you're preparing a quick meal for one person or a large group, this recipe is a breeze. Just line up the sausages in a pan, pop it in the oven, and voilà—dinner is served!

Serving size: 2 people
Time: 25 minutes

Ingredients:

  • 4 mild Italian sausage
  • 2 mozzarella cheese sticks
  • 1 12-16 ounce jar of your favorite pasta sauce

Directions:

  1. Preheat the oven to 400 degrees.
  2. In a pan or griddle, partially cook the sausage for about 5 minutes on each side.
  3. Slice down the middle but don’t cut all the way through the sausage. You don’t want it to split in half, if possible.
  4. Cut the mozzarella in half and place 1 half of the cheese in each sausage.
  5. Pour the pasta sauce in a shallow dish and place the sausages on top.
  6. Bake at 400 degrees for 12 minutes or until the cheese is bubbling. Enjoy!
