Crispy Rice Salad
Ingredients:
-1 @minutericeus Basmati Rice Cup
-2 tbsp
-salt & pepper, to taste
-2 cups mixed greens
-1/2 cup cooked butternut squash
-1/2 of an apple, sliced
-1/4 cup pomegranate seeds
-1/4 cup pecans, optional
-1/4 cup feta or goat cheese
-dressing of choice.
Directions:
- Remove the film from the rice cup and place the cup in the microwave for 60 seconds.
- In a sauté pan over medium heat, add the oil and rice. Sprinkle with salt and pepper.
- Press the rice down in an even layer to crisp up. Let it sit for about 3 minutes. Then flip and cook for another 2 minutes or until crispy.
- Remove from the pan and cool on a plate.
- Build your salad. Add the lettuce to a bowl and the rest of the ingredients.
- Add dressing of choice, toss and enjoy
