Crispy Rice Salad

Ingredients:

-1 @minutericeus Basmati Rice Cup

-2 tbsp 

-salt & pepper, to taste

-2 cups mixed greens

-1/2 cup cooked butternut squash 

-1/2 of an apple, sliced 

-1/4 cup pomegranate seeds

-1/4 cup pecans, optional

-1/4 cup feta or goat cheese

-dressing of choice. 

Directions:

  1. Remove the film from the rice cup and place the cup in the microwave for 60 seconds. 
  2. In a sauté pan over medium heat, add the oil and rice. Sprinkle with salt and pepper. 
  3. Press the rice down in an even layer to crisp up. Let it sit for about 3 minutes. Then flip and cook for another 2 minutes or until crispy. 
  4. Remove from the pan and cool on a plate. 
  5. Build your salad. Add the lettuce to a bowl and the rest of the ingredients. 
  6. Add dressing of choice, toss and enjoy
