Cranberry & Goat Cheese Pork

I came up with this recipe during the holiday season, with a desire to infuse the savory with the delightful sweetness of dried cranberries. The result was stuffing pork with a delectable mixture of dried cranberries, goat cheese, and pecans, creating a truly wonderful flavor combination. It's akin to hosting a holiday party right in your mouth! For added festive appeal, garnish it with fresh green herbs. I particularly enjoy serving this alongside wild rice and a warm spinach salad for a complete and satisfying meal.

Serving size: 4-6 people
Time: 1 hour

Ingredients:

  • 1 pork loin or tenderloin
  • 3/4 cup dried cranberries
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped pecans
  • 2 teaspoons [Not So] SIMPLE SPICE
  • spice mixture (1/2 tsp pumpkin pie spice, 1/2 tsp dried thyme, 1/2 tsp dried sage)
  • optional cranberry topping (1/2 cup dried cranberries mixed with 2 tbsp water & 3 tbsp honey)

Directions:

  1. Preheat the oven to 400 degrees.
  2. Butterfly the pork so you can stuff it.
  3. Add the cranberries then goat cheese and pecans evenly down the inside of the pork.
  4. Wrap up and secure with kitchen twine.
  5. Place pork on a greased cookie sheet and rub the spices onto the pork.
  6. Bake at 400 for 45 minutes or until the internal temp reaches 145-160 degrees.

*Optional: add cranberry topping with fresh thyme & sage. Enjoy!
