The vibrant colors in this ice cream are so fun that anyone who lays eyes on it will be tempted to take a big scoop! I had a surplus of cookie monster cookies on hand, and it got me thinking: why not whip up a batch of blue ice cream and load it with those delicious cookies? Like many of my recipes, this one has a way of invoking a sense of nostalgia, especially for me, as I fondly recall watching cartoons featuring the cookie monster during my childhood. You have the option to prepare your own homemade ice cream or simply pick up some vanilla ice cream and infuse it with a touch of blue food coloring. This sweet indulgence will undoubtedly leave everyone clamoring for seconds, all the while humming, "C is for cookie, and that's good enough for me!"

Ingredients:
- Your favorite Vanilla Ice Cream (you can use 12 ounces or all the way to 48 ounces
- Leftover cookie monster cookies (recipe below)
- Blue food coloring
Directions:
- In a large bowl, mix together the softened vanilla ice cream with blue food coloring.
- Fold in cookie monster cookie crumbles.
- Pour into a container, seal and place back in the freezer for about 1 hour. Enjoy!
Cookie Monster Cookies
Ingredients:
- 1 package of sugar cookie mix
- 1 egg
- 1 stick of butter, melted
- 8 drop of blue food coloring
- 1 (3.5 ounces) mini Oreos, lightly crumbled
- 1 (3.5 ounces) mini chocolate chip cookies, lightly crumbled
Directions:
- Preheat the oven to 375 degrees.
- In a large mixing bowl, melt the butter.
- Stir in the cookie mix, food coloring & 1 egg until combined.
- Gently fold in the crumbled cookies, leaving a few to add on top of the cookies after they are cooked.
- Scoop onto a cookie sheet, leaving space in between so the cookies don’t spread together when cooking.
- Bake for 10 minutes then remove from the oven and place the rest of the crumbled cookies on top. Enjoy!
