Apple Chicken & Rice

Ingredients:

For the Chicken:

  • 1 large chicken breast, boneless and skin-on (or 2-4 boneless, skinless halves, depending on size)
  • 2 tbsp olive oil or melted butter
  • ½ teaspoon [Not So] SIMPLE SPICE

For the Rice and Apple Filling:

  • 1 cup cooked rice (white or wild rice is preferable)
  • 1 medium apple, peeled, cored, and diced into tiny pieces
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup walnuts or pecans, chopped (optional)
  • 1 teaspoon poultry seasoning or a mix of dried sage, thyme, and rosemary
  • 2 tablespoons olive oil
  • 1 teaspoon [Not So] SIMPLE SPICE

Directions:

  1. In a large skillet, heat olive oil over medium heat. 
  2. Add the onions and garlic, sautéing until soft and translucent, about 3-5 minutes.
  3. Add the diced apples and continue to sauté for another 5 minutes or until the apples start to soften. 
  4. Stir in the cooked rice, walnuts or pecans, poultry seasoning and SIMPLE SPICE. Mix well and cook for an additional 2-3 minutes, ensuring everything is heated through. Remove from heat and set aside.
  5. Preheat your oven to 375 degrees. 
  6. If using a whole chicken breast, butterfly it open. If using halves, create a pocket in each piece by slicing horizontally into the thickest part, but not all the way through.
  7. Season the inside and outside of the chicken with SIMPLE SPICE.
  8. Stuff each chicken breast or pocket with the rice and apple filling, securing the opening with toothpicks if necessary.
  9. In a skillet, heat some olive oil over medium-high heat. Once hot, add the stuffed chicken breasts. Sear each side until golden brown, about 2-3 minutes per side. 
  10. Transfer the skillet or chicken breasts to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165 degrees. 
  11. Once cooked, allow the chicken to rest for a few minutes before serving then enjoy!
